Don't throw away those butternut squash seeds! They're delicious! (Recipe below)


I hate to think how many years I threw away these little beauties, completely unaware of how delicious and moreish they are.

Granted, getting them free from the stringy membrane in the centre of the butternut squash can be a bit fiddly but if you're anything like me and a bit of a natural picker then you'll love this job, I do. It has the same cathartic effect as knitting, or so I like to think.

You can of course buy seeds ready roasted with spices in the supermarket but these are free! You were going to throw them away anyway and I defy you to try them and not eat them all! No self-restraint needed here though because they’re a good source of omega 6 fats plus they're a great protein snack, helping to keep your blood sugar level nicely balanced.

You can use any seeds with this recipe such as pumpkin and sunflower so you don't have to wait until you next buy a squash.

Spicy Seeds recipe

1. Preheat oven to 180C

2. Scatter the seeds onto a lightly oiled baking tray, sprinkle over any spices you fancy i.e. garlic, chilli flakes, cumin, coriander, mixed herbs, paprika, sea salt …..

3. Bake for 10 minutes and check. They may need a few extra minutes to get golden brown.

4. Sit back with a good book and enjoy your snack.
