Well, in the interests of enjoying a healthy snack on Valentine's Day this year I suggest the following... Whip up a batch of these health-packed beauties, pop them in a presentation box with a big red ribbon, give them to the man of your dreams and wait by a log fire with your feet up for him to ford a few rivers and 'surprise' you with them.
Can't wait that long? Easy... present them to yourself but don't forget to wish yourself a happy Valentine's day!
Important fact: The higher the percentage of cocoa in a bar, the less there is added sugar. I personally use 90% to make these chocolates which means less than 2 teaspoons of sugar in the whole bar.
Makes 48 individual chocolates
400g dark chocolate over 70% cocoa (broken up into small pieces)
Dried cranberries (unsweetened)
Dried blueberries (unsweetened)
Dried cherries (unsweetened)
Treat size paper cases or chocolate moulds
1. Place the chocolate into a heat-proof bowl and sit it in a double boiler pan that has some water in the base (the water should not be able to touch the base of the bowl as it will burn the chocolate). Bring the water to the boil but immediately reduce the heat so the chocolate melts gently and does not burn.
2. Spoon the chocolate into the moulds and sprinkle in your chosen fruit and nuts.
3. Allow to set.
